This is the second part of "How to make koeksisters" series

In our first series we discussed "How to make Cape Malay Koe-sisters". In this series we will learn "How to make Afrikaans Koeksisters". Enjoy!

Origins of the Koeksister

Pronounced Cook-Sister :)

The Afrikaans Koeksister has a very interesting history. In fact, there were two versions of the recipe brought to the Cape by the Dutch settlers.

The first recipe, was s simple fried treat, similar to the doughnut and the second recipe was a thin bowtie like dessert made out of pasta dough. 

An innovative person, no one knows who, decided to combine the recipes. They began braiding the dough instead of leaving it into a little ball. And this is how the Koeksuster was born.

Today, we will be sharing the Afrikaans version of How To Make Koeksisters.  Enjoy.

Syrup:

  • 1 kg sugar
  •  2 cups water
  • a cinnamon stick
  • 5 small slices of ginger
  • 1 lemon

Dough

  • 280 grams cake flour
  • 1/2 teaspoon salt
  • 2 tbsp baking powder
  • 4 tbsp butter
  • 1 large egg
  • 7 tbsp water
  • 6 cups oil

Day 1 - Make the syrup 

Step 1. Add the sugar and water to a sauce pan over low heat and stir until the sugar is dissolved.

Bring the mixture to a boil and cook for one minute,

 

Step 2. Add lemon juice, cinnamon stick, lemon zest and ginger, lower heat and simmer for 5 minutes

Step 3. Remove from heat, 

Day 2 : Making the Koeksisters

Step 1: Sift flour, baking powder and salt together 

 Step 2: Rub butter in with fingertips until mixture resembles breadcrumbs 

Step 3: Add beaten egg and mix with palette knife

Step 4: add water a little bit at a time until mixture gradually comes together (if dough becomes too sticky, add more flour)

Step 5: Sit dough on clean surface and knead for 30 seconds until ball is formed

Step 6: Place ball on plate, cover with cling wrap and leave aside for 1 hour at room temperature

Step 7: Roll out dough on lightly floured surface until 1 cm thick

Step 8: Cut dough into rectangular shape before dividing into 4 cm wide strips

Step 9: Make 2 incisions into strip, each 1 cm apart

Step 10: Plait the three legs tightly and pinch the bottom to secure - fold top in to resemble bottom and repeat process with the rest of the dough

Step 11: Fry dough in oil for 3 minutes until golden brown, remove with slotted spoon and place on kitchen towel

 

 Step12: Dunk koeksisters in cold syrup and coat generously before leaving to soak for 1 minute

Step 13: Transfer koeksisters onto rack and leave to cool before serving
